Asian leafy greens include are bok choy, Gailan, Chinese mustard, Yam leaves and so many more. You just have to walk down the veggie isle in an Asian market to see the array of greens they stock. Some of them like bok choy and Gailan are getting popular and can be seen in regular stores these days, but its fun to explore different greens.
Why do I love greens? For several reasons, one they are so easy to prepare. Simply wash, chop and literally run it through a warm pan with a couple of aromatics. They are perfectly cooked, tender and crisp. This simple dish is eaten all over Asian homes and makes a quick veggie side to go long with your dinner, though I think it should be the star of the meal.
Secondly, these dark greens are a powerhouse of nutrients. Packed with vitamins, minerals phytochemicals we should all be eating everyday.. It’s loaded with vitamin A, C and K, contains antioxidants and a significant amount of iron, calcium and magnesium for overall health. As with any cruciferous vegetable it provides the same beneficial properties as cabbage, broccoli, cauliflower, Brussels sprouts and great for cardiovascular health and cancer fighting properties.
