This dip is bit of an indulgence and a luxury in terms of calories. Perfect dip for the upcoming holiday and party season. If you want to make this vegan substitute plant alternatives as needed. It’s still delicious.
Artichoke dip
Ingredients:
- 1 Cup Mayonnaise.
- 1 Cup Fresh Parmesan Cheese, Grated.
- 8 oz Cream Cheese, Softened.
- 1-2 Cloves of Garlic, minced.
- 1 Package about 14 oz frozen or canned Artichokes, rinsed, drained and lightly squeezed
- Sea Salt and freshly ground black pepper
- 1 small, Meyer lemon, 2 tablespoon juice and about 1/2 lemon peel chopped
- 1 tablespoon dill, minced
In a bowl mix mayo, cream cheese, Parmesan cheese, garlic, salt and pepper, dill. Pulse the artichoke a few times so it’s finely chopped but not pureed. Add the artichoke to the bowl along with lemon peel and mix well. Transfer it to a bowl and serve with crackers and veggies crudités.
