Green rice is a wonderful dish that goes well with all Mexican mains or any protein. Its also called Arroz Verde that translates to green rice. I make this quiet often when I’m short of time and have no time for making a separate veggie. we eat it mostly with beans.
Its a simple dish made with cilantro, garlic, olive oil that gives it the bright green color and flavor. I also add some broccoli or spinach for extra green and nutrition. On this occasion its spinach.
Ingredients
- 1-1/2 cups white or brown basmati rice
- 1 cup cilantro tightly packed
- 1 cup organic spinach packed, optional
- 2 fat cloves garlic
- 2-3 tablespoons olive oil
- 1 small onion
- 2-1/2 cups water or stock
- sea salt and pepper as needed
Wash and soak the rice for 30 minutes.
In the meanwhile, in a small processor puree the garlic, onion, cilantro, olive oil and spinach if using. Add a little stock if needed to move the leaves.
Bring the water or stock to a boil and cook the rice as normal. Add the green puree about half way through the cooking process. I find this retain s the bright green color of the rice.
Finish steaming the rice till done. let it sit for a few minutes before serving.
