Salsa’s are all about adding some zestiness to a meal. Every trip I took to Mexico I got to try the most delicious tacos and amazing salsas. I love the traditional picos, guacamole, the greens and reds, the fruity ones, but as I’ve discovered there is so much more one can do to up the salsa game.
This one is perfect to top any taco specially in the summer months when you want something fresh and crunchy. Incredibly simple to put together and it goes with any cuisine. I recommend you try it over fish tacos, grilled foods, bbqs, or anything you fancy.
Ingredients
3 medium Persian cucumbers
1/2 a small red onion
2 cups fresh radishes
1 Serrano or jalapeño finely diced
salt and black pepper to taste
1/2 cup chopped cilantro
juice from one lime
Chop the onion, cucumbers and radishes into small and similar size. You can do this manually or pulse it a few times in a food processor. I prefer the latter. Then add the remaining ingredients. Mix well and use as needed. Stay fresh for about 2 days.
