Pitaya or strawberry pear or dragon fruit is a whimsical looking fruit grown all over Asia, Latin America and other tropical countries. The fruit belongs to the cactus family and comes in a white or deep pink flesh, from the outside it has a bright magenta skin with soft green thorns. The inside can vary from white flesh with tiny black crunchy seeds or neon-psychedelic Barbie pink. In terms of taste its fairly bland almost like a kiwi but way less sweet. Pitaya is rich in immune boosting vitamin C, iron, beta carotene, lycopene, prebiotic, other vitamins, minerals and is mildly laxative.
The growing popularity of this beautiful fruit has lead to the farming them in the United States bringing the price of the fruit a bit down. I found this at my local grocery store on sale and had to snag one of it. To extent the fruit I blended it with banana and other fruits to make a smoothie.
heres my recipe:
- 1-2 medium bananas chopped and frozen if you like it thick
- 1 Pitaya fresh diced or one 3 ounce frozen packet
- 3-4 strawberries
- a splash of almond or plant milk or coconut water
- sweetners of needed
- Toppings
- granola
- nuts or seeds
- a few berries
- kiwi slices and or mango cubes
In a food processor or high speed blender add the Pitaya, banana, strawberry, milk or coconut water and process till smooth. Pour into a jar or bowl and top it with more fruit, granola and nuts.
