My daughter absolutely loves carrots and she eats them everyday. So we are always looking for new ways to make interesting recipes with carrots. Carrots are a base for many recipes like pasta sauces, sofrito, soups, stews and many more. To make carrots by itself as a stand alone vegetable and make it delicious needs inspiration. Most time we eat them as a healthy snack or a side because it’s highly nutritious or as a filler to fill the 5 a day veggie.
Here is one easy recipe that can be a snack or a side to a meal. Roasting carrots turns them sweet, intense and caramelized by its own natural sugars. Look for carrots that still have their fresh green tops and not too thick. The bagged ones with tops cut off are okay as well.
You will need
- 1-2 bunches of multi colored carrots (about12-15) small to medium-sized.
- olive oil to brush
- salt and pepper to taste
- for the gremolata
- 2 tablespoons goji berries
- 1/4 cup shelled pistachio nuts roughly chopped
- 1/2 cup parsley leaves chopped
- zest of one lemon
- juice from half the lemon
- a pinch of chilli flakes ( optional)
- 1 clove garlic mashed
Preheat the oven to 375F.
Scrub and wash the carrots very well. Trim and cut the tops of leaving an inch of green stem. If you feel like you can also peel the top layer. Lightly brush the olive oil and season with salt and pepper. Lay the carrots on a lined roasting tray. Roast them in a preheated over for 20-25 minutes. While the carrots roast make the gremolata.; mix the prepared ingredients of the gremolata.
Once the carrots and slightly soft and getting charred at the edges take them out from the oven. Serve them on a plate with the gremolata spooned on top and extra on the side. Enjoy.
