Chicken Skewers with Bulgur Pilaf and Herbed Feta Sauce At a glance, this recipe may look like a lot of steps, but once you go through the trouble of making this Feta dip/sauce, it can be used in a handful of meals or as a delicious sandwich spread. The chicken marinade is a good one too, It is so delicious and great to have around, especially during grilling season, again it will marinate a 2-3 pounds of chicken thats 2-3 weeknight meals. .
I served this meal with some wholesome bulgur pilaf which is my newly adopted grain, its high fiber, very filling and the endless chew gives a great satisfying satiation. Thread up some bell peppers, zucchini and onions along with the chicken for the veggie component and a few raw cucumbers for crunch and you’re good to go. Over all, it’s a great meal for weeknights or weekend + delicious enough for the whole family.
