It must be one of the simplest and insanely delicious breakfast toasts out there, something you’ll find at a fancy gourmet brunch place. The curveball is the whipped ricotta. Hear me out, whipped ricotta has a luxurious texture, it has a rich creamy texture almost like soft scoop ice cream making perfect to spread on toast.
The stores have started to display the most beautiful, juicy, jewel toned citruses, and I feel this uncontrollable need to buy them all. I know it is totally normal with us food bloggers, and my brain is hard-wired to immediately buy bags of them, and eat half of them right away. Every year I create new recipes to use them new and interesting ways but nothing like eating them as is.
I wish I could give you guys more, but this toast is incredibly simple, made in less than 10 minutes and served for busy mornings or afternoon snacks. The leftover ricotta can be saved in a clean container refrigerated to use in other recipes within a few days.
Ingredients
- Oranges: We used Cara Cara and blood as they have short seasons and a treat to enjoy when available.
- Ricotta: Both whole and partly skimmed ricotta works. I used whole.
- Sweetener: Honey or maple syrup, we’ll need just a little to drizzle on top.
- Chili Flakes: optional but we like a little.
- Arugula: I love the pairing of sweet, creamy and peppery arugula here. Its totally optional.
Citrus +Whipped Ricotta Toast

Ingredients
- 3 oranges, Cara Cara/Blood/Navel
- 1 lemon (juice and zest)
- 2-3 tbsp honey or maple syrup
- 1½ cups whole milk or skim Ricotta
- ¼ tsp vanilla extract
- 1 tsp thyme leaves
- 6 large thick sliced bread, anything you normally use
- flaky salt and black pepper as needed
Instructions
- In a small mixing bowl, mix the honey, thyme leaves, 2 tbsp lemon juice, 2 tbsp orange juice.
- Peel and slice the oranges. Toast the bread.
- In a small food processor whisk the ricotta and vanilla extract until fluffy, creamy and smooth.
- Spread with ricotta, place the orange slices and drizzle with the lemon-honey mixture and garnish with a few leaves of arugula. Season with salt and pepper. enjoy!!
