






Overnight oats are the best healthy make-ahead breakfast! They’re not only delicious and nutritious but so fun to prepare. I love to add seasonal fruits, seeds and make popular dessert variations to keep me from getting stuck in a breakfast rut. If you love eating oatmeal in the morning but don’t have time to cook before you head out the door, overnight oats are perfect. My base recipe consists of whole rolled oats, ground flax, hemp or chia soaked in almond milk overnight with a dash of vanilla. In the morning, the oats are soft and easy to digest, and the mixture has a thick, porridge-like consistency that’s satisfying to eat.
This recipe has fresh summer ripe peaches and along with creamy oats it is like dessert for breakfast, hence the title. With a healthy dose of plant fats, complex carbs, fiber, and protein from oats, yogurt, chia, peaches and walnuts this recipe is an excellent start to a day. Hope you like it as much as we do!

Peaches-n-Cream Overnight Oatmeal


Ingredients
- ½ cup rolled oats use gluten free, organic if possible
- 2 tbsp chia seeds organic preferably
- ¾ cup almond or other plant milk of your choice homemade or good quality store bought
- 2 tbsp plain unsweetened plant yogurt I use full fat cashew yogurt, coconut is good too
- ½ medium fresh peach, diced or use frozen
- 1-2 tbsp walnuts or any nuts of your choice optional
- 1 tsp maple syrup or sweetener of your choice optional, I didn’t use any as the peaches were quiet sweet
- ¼ tsp vanilla extract
Instructions
- In a bowl or mason jar, combine plant milk, vanilla and and chia seeds. Stir to combine. Set aside for 10 minutes to absorb the liquid a little.
- Add oats and diced peaches. Stir well, slightly mashing the peaches with spoon to make it creamy. Now add plant yogurt on top and swirl into the oats. Leave some big clumps to create a creamy texture — they’re delicious the next day when its chilled! Secure with a lid if using a jar and place in the fridge for at least 8 hours or overnight.
Notes
- For quick warm cooked oats, heat the overnight oats in the microwave for 45-60 seconds. If placed in a jar make sure there’s enough room at the top of your jar to allow for expansion and prevent overflow, and that it’s a microwave-safe container.
- Alternatively, transfer the overnight oats to a saucepan and heat over medium heat until warmed through. You may need to add more liquid if oats seem too thick/dry, chia seeds are very thirsty and absorb a lot of liquid.
- Overnight oats will keep in the refrigerator for 2- at most3 days, though best within the first 12-24 hours. It never lasts that long in my fridge haha!
- Overnight oats are not freezer friendly.
