Grilled zucchini have a delicious charred flavor and a bite to them. They’re so versatile, refreshing, elevate any summer dish, essentially a star of summer eating.
At this time of year, do you start thinking that you’ve cooked all the possible zucchini recipes out there? This morning I walked in my backyard and saw another two ready for this week, they just keep coming, not complaining but the question in my head “What next?”. Well, luckily we love zucchini and it being one versatile veggie can go in any direction. It tastes fantastic in pastas, tacos, salads, zoodling them, make zucchini breads, simply saute or stir fry them, heck I even throw some in my morning smoothies! You can grill it, bake it, sauté it, and also eat it raw. It might feel like we’ve cooked it in every way known to man, but there are always more zucchini recipes to try.

Grilling Zucchini
Slice you’re zucchini into thick strips, grilling this way is easy to handle. Preheat a grill or grill pan to high heat, and toss the zucchini with olive oil, salt, and pepper.
When the grill is hot, place the pieces cut-side-down for about 2 minutes. Then, flip them and grill them for an additional 2-3 minutes, until grill marks appear. Transfer the zucchini from the grill to a plate or large bowl. While it’s still hot, toss it with lemon juice. Enjoy!
Alternatively grilled zucchini is fantastic as a side dish! It would also be fabulous in a summer sandwich like this Grilled Veggie Pesto sandwich or Halloumi Grilled Veggie sandwich .
Grilled Zucchini
Ingredients
- 2-3 medium zucchini, sliced
- e.v.olive oil for brushing
- sea salt and black pepper as needed
Optional Toppings
- juice of ½ lemon
- ½ tsp chili flakes
- 2 tbsp parmesan cheese or crumbled feta
- chili flakes
- fresh mint or dill chopped
Instructions
- Preheat a grill to high heat. Toss the zucchini lightly with olive oil and pinches of salt and pepper. Grill cut side-down for 2 minutes, then flip and grill skin-side down for 3 to 4 minutes or until char marks form.
- Once cooked transfer to a plate, and squeeze with lemon juice and add any optional topping you like. Enjoy!
