I was up to my ears with zucchinis and tomatoes from my garden… this week, and we’ve been eating loads of cherries, the only fruit tree we have in our garden, they’re super delicious right now! specially the super dark ones. Though I have to watch my fruit consumption as I can get carried away. I don’t know about others, but as Im getting older, fruit gives me a sugar high and I feel it.
In moderation like everything, fruit should be consumed in moderation too. I don’t really make desserts on a regular basis, however I love overnight oats, and love to add seasonal fruit to give it some sweetness and a good boost of nutrients, thats enough dessert for me. I also love to name them after popular desserts, even though the ingredients are different, but does a great job of satisfying my dessert cravings. I have been making this breakfast combination all summer, it’s so delicious! and we’ve been eating overnight oats with berries or stone fruit all week.
If you’re new to overnight oats, they were originated in the Nordic region. Super easy to make because they don’t need to be cooked. At a basic level it’s a mixture of oats and milk (I use unsweetened homemade or sometimes almond milk) stored overnight in the fridge, they soften and ready to eat in the morning. Overnight oats are perfect for rushed mornings, all you need to do is add whatever toppings you like and go!.
Black Forest overnight oatmeal
I’m excited already for you to try this recipe!
This overnight oatmeal takes inspiration from the famed German black forest gateau, the tradition cake is made with a combination of chocolate sponge cake layered with whipped cream and cherry filling. For our oatmeal we soak our oats in oat milk, ground flax + cacao, defrosted pitted cherries, almond or vanilla extract and a little maple for sweetness( I didn’t add any as the frozen cherries are quiet sweet) then topped with fresh cherries, creamy vegan Greek yogurt, and cacao nibs. The result is a luscious, luxurious and nutritious breakfast to satisfy any midweek dessert cravings.
