
Overnight oats are the perfect breakfast if you love eating oatmeal in the morning, I find having something already made stops me from indulging in baked treats which tend to gives me fuel at first then a slump mid-morning. For that reason and the fact that I love oatmeal I look forward to oatmeal mornings. My base recipe consists of whole rolled oats soaked overnight in almond or other homemade/ store bought plant milk, some ground flax or chia, a sprinkle of cinnamon and sometimes a thin drizzle of maple syrup. Oats made like this is soft and easy to digest with a thick, porridge-like consistency that’s mimics some kind a dessert, hence the title.
I absolutely love overnight oats – but I am also a creature of habit and have a tendency to get stuck in a rut, I recently stumbled upon an Instagram post who titled her oatmeal bowl with different desserts, that was so cool, it was someone I don’t follow and never got the name to give her credit. Anyway this one may not be like a cheesecake, but the flavors are so similar and mimics its creamy soft texture without indulging into the real thing.

How to Make Overnight Oats
If you’re new to overnight oats, making them is easy! Here’s how:
- We start the night before, mix 1/2 cup whole rolled oats and 1 cup milk. I use oat or almond milk, but other plant milks or cow’s milk would work here too. Then pimp it out literally with fresh fruit, chopped nuts and seeds or butters, maple syrup and a dash of salt. Stir to combine!
- Cover and refrigerate your oats overnight in an airtight container.
- In the morning, your oatmeal is ready to eat! Transfer them to a bowl or mason jar before topping and enjoy or take it to go.
Strawberry Cheesecake Overnight Oats with Chia



Ingredients
- 1 cup frozen strawberries
- 2 tbsp chia seeds
- 1 cup rolled oats, gluten free, organic preferably
- 2 cups almond, oat or other plant milk organic preferably, Calcium fortified
- 1 tbsp pure maple syrup
- ¼ tsp vanilla extract
- small pinch of sea salt
- 1 tbsp lemon juice
- 2 tbsp plain unsweetened plant yogurt
- 2 tbsp sliced or chopped almonds optional
Instructions
- In a small pan add the frozen strawberries, maple, chia seeds, lemon juice and salt. Cook for 5-10 minutes until the berries are defrosted and start to release their juice. As the chia seeds absorb the juice the berries will begin to thicken like jam. Take it off the heat and mash the strawberries with a fork, and let sit to cool slightly, it will further thicken.
- n a medium bowl, combine the oats, milk and vanilla.Seal the container, and let it sit overnight in the fridge.
- The next morning, top with yogurt, strawberry chia jam, fresh strawberries and other desired toppings, and enjoy!
