Hey hey! How is that beautiful are these toasts if I can say that myself?!?! Bonus they were so so good that we made more and had them for dessert. This post is a quick one, I forgot how wonderful fresh fruit with something creamy like nut butter, yogurt or ricotta tastes. Make it! It works with any berry or stone fruit, specially now as we are heading towards the tail end of summer.
Speaking of late summer I see myself drawn to more roasting vegetables than tossing a salads. Hubby and kids are asking for my curries, roast chicken, one-skillet dishes that will make the house smell dreamy. Sounds exciting, but I want to hang on to summer a few more weeks before I commit to fall produce.
4 Summer Fruit Breakfast Tartines
Ingredients
- 4 slices really good quality rustic/wholegrain/seeded artisanal bread
Blueberry Toast
- 1-2 tbsp almond or other nut butter
- ¼ cup fresh blueberries, sliced if needed
- 1 small sprig thyme
- pinch of black pepper
Strawberry Toast
- 2 tbsp vegan or regular ricotta or Greek yogurt or lebneh
- ½ cup fresh strawberries, sliced
- 1 tbsp balsamic reduction
- 2-3 fresh basil leaves
Peach Toast
- 2 tbsps gorgonzola, crumbled or any blue cheese of your choice
- ½ peach, sliced and grilled
- 1 teaspoon chia seeds
Cherry Toast
- ½ cup cherries, pitted and sliced
- 2 tablespoons fresh goat cheese, lightly whipped
- ¼ teaspoon local floral honey, optional
- 1 small sprig thyme leaves
Instructions
- Toast the bread slices until golden and crispy.
- Spread the cheese or nut butter as recommended for each toast or you can mix-n-match, I found the recommend fruit to spread paired really well. Grill the peach and slice the other fruits.
- Top the toasts with fruit and garnishes recommended. enjoy!!
