

A fun easy way to add more veggies into your diet. This sandwich is packed with rainbow veggies but, the true star is the goddess sauce that brings it all together. I have had this sandwich twice already this week and I can safely say it will be on a repeat all through the warm weather this year. I can already hear a few people gaging at the amount of veggies in this sandwich, I can assure you this sandwich is anything but boring. The veggies are highlighted with a thick layer of avocado goddess one both sides of the bread, it’s made with a bunch of fresh herbs, avocado, olive oil, jalapeño, sour cream that is full of fresh flavors and also adds a creamy smooth component. To add more pickle like flavor to the sandwich I love the addition of some briny kraut for crunch, though it is quiet good by itself.
**To boost the sandwich a slice of cheese or some roast chicken will also be delicious in case you’re serving it to kids to some added protein. Hope you give it a try and enjoy it as much as I did.









Sonoma Veggie Sandwich with Avocado Goddess, Makes 2-3 sandwiches
Ingredients
Avocado Goddess
- 1 cup packed fresh herbs (basil, cilantro and parsley) or use whatever you have on hand, in my experience these 3 herbs work the best
- 1 medium to large avocado, pitted & scooped
- 1/4 cup e. v olive oil
- 1/3 cup plain greek yogurt or cultured sour cream
- 3 tablespoons fresh lemon juice
- 2 green onions, white and some good green parts
- 1 jalapeno, optional but recommended
- 2 small cloves garlic
- 1 anchovy fillet (optional omit if vegetarian or vegan)
- 1/2 teaspoon salt + pepper or to taste
The Sandwich
- 4-6 slices seeded whole grain bread
- 1 cup organic baby spinach or greens of your choice
- 1-2 Persian cucumber or small zucchini sliced thinly
- 2-4 radishes sliced thinly
- 1-2 roasted red bell pepper, I used one large pepper from a jar
- 2 medium sized carrots shaved or shredded
- 1 cup fresh sprouts
- jalepeño, sliced optional
- 1/2 cup Sauerkraut, optional
- For added protein add thin slices of grilled chicken, sliced cheese like muenster, provolone or couple tablespoons of goat cheese
Instructions
Goddess Dressing
- In a blender or high powered food processor, combine the chopped avocado, herbs, green onions, jalapeno, garlic, anchovy (if using), lemon juice, greek yogurt and olive oil. Blend on high for 1-2 minutes or until the sauce is green and smooth. Season with salt and pepper. Taste and adjust if needed. Store in the fridge for up to 1 week.
Sandwiches
- Prepare all the veggies by slicing or shredding as mentioned in the ingredients.
- Spread a thick layer of the sauce on both sides of the bread. You can also toast the bread if desired. Layer on the veggies, lightly seasoning each as you go, starting with roast peppers, thinly sliced cucumbers (or zucchini), radishes, carrots, sprouts and spinach. If using cheese or chicken you can add it now as the last layer.
- Place the other slice on top of the sandwich and give the sandwich a good smush. Enjoy with a side of veggie chips, strawberries and seltzer.
