We are in in full spring mode around here. Say hello to my Guacamole Turkey Burger with Chipotle Slaw, a welcome departure from the winter recipes. It’s spicy, cheesy, loaded with creamy guacamole, and crunchy chipotle slaw. I mean, there is so much to love in this burger right!? It’s no surprise I went all out Mexican flavors for this recipe as turkey needs some help with flavors. To start Im picky with ground turkey, no ground turkey breast for me, the texture and flavor just doesn’t cut it for us. I always choose organic turkey meat, not breast, Trader Joe organic is my favorite as it still has some fat and adding a few spices really brings out the best flavors. We grilled these burgers outdoor today as the weather was warm, sunny and just perfect burger weather to sit out and eat. Im so looking forward to spring and summer cooking as every year.
We start with adding spices, grated or finely chopped shallots to the mince and let it sit for a few minutes while we prepare the guacamole and slaw. For the guca I kept it simple with sea salt, lime juice, a little bottled hot sauce and couple spoons of minced onions. For the slaw we need shredded cabbage a good 3-4 cups of red or green or mix of both colors which is then tossed with chipotle sauce, made with a little mayo, sour cream, chipotle in adobo sauce, garlic and lime juice. Once ready to eat we grill the turkey patty, assemble and eat. These burgers are full of Mexican flavors and the heat can be balanced to your taste, I normally go little heavy with the heat and thats just perfect for me. Guacamole Turkey Burger with Chipotle Slaw Serves 4
Ingredients
- 1 pound good quality organic ground turkey not breast please
- 2-3 tablespoons grated cheddar or jack cheese
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 2-3 tablespoons fresh minced cilantro, optional
- kosher salt and pepper as needed
- 1 medium shallot grated or minced
- 4 burger buns, brioche preferred, toasted
- 2-3 large-medium avocados lightly mashed
- juice from 1 lime
- sea salt as needed
- 2 tablespoons minced onion
- few drops jalapeño hot sauce
Chipotle Slaw
- ½ cup sour cream/greek yogurt
- 1 tablespoon avocado oil mayo or any good quality mayo
- 1-3 chipotle in adobo sauce, adjust to your taste
- 1 small clove garlic
- 1 –2 teaspoons lime juice, use more or less to your taste
- ⅛ teaspoon salt, more or less to taste
- 1/2 teaspoon maple syrup or honey
- 4 cups finely shredded red/green cabbage, or mix of both
Instructions
- Blend all the ingredients for the chipotle sauce except the cabbage. Once blended toss it with the shredded cabbage little at time, you may not need all of it. Gently mix with a light massaging action to soften the cabbage. Set aside.
- Roughly mash the avocado with sea salt, minced onion, lime juice, hot sauce. Taste and make sure its well seasoned. Set aside.
- In a medium bowl, combine the turkey, minced cilantro, grated shallot, cheddar, cumin, garlic powder, paprika, salt, and pepper. Mix evenly until just combined and then shape the mix into 4-5 even sized burger patties.
- Preheat the outdoor grill or indoor grill pan to high-medium high. Grill the Brioche buns and set aside. In the same grill pan grill the burger for 5 minute per side or until cooked through. To assemble, pile the chipotle cabbage slaw on the bottom of each bun. Top with a burger patty and pile on the guacamole with a little lime juice. Serve right away.
