A hearty substantial salad choke full of yummy Mediterranean flavors. Its just the thing you need on hot summer nights when you don’t want to turn on your stove. It makes a great side dish for your bbq, grilled proteins or perfectly fine to eat just by it self. I recommend a big piece of chilled watermelon to end your meal.
Its packed with healthy beans, veggies and my favorite zesty Zaatar vinaigrette. It also happens to be very forgiving and flexible as every ingredient is to your personal choice, add or remove anything you like or dislike. We particualry like it with grilled salmon and shrimp. It is simple, nutritious and yet delicious. Enjoy!
Mediterranean White Bean Salad with Zaatar Vinaigrette
Ingredients
- 1-15 oz can white cannellini or navy beans drained & rinsed
- 2 Persian cucumbers or ½ regular English cucumber, diced
- ½ cup kalamata olives or castelventrano olives, use more if you love olives
- ½ medium red bell pepper, diced the same size as the cucumber
- 1/2 medium red onion diced
- 1/2 lb baby/cherry tomatoes halved
- 2 tablespoons fresh parsley finely chopped
- 2 tablespoons chopped dill
- 1/2 teaspoon dried oregano
- 1/2 cup crumbled feta cheese, optional
- Salt & pepper to taste
- 2-3 tablespoons your best cold pressed extra virgin olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon Sumac
- 1/2 teaspoon red chili flakes
- ½ teaspoon Aleppo pepper (optional)
- 1/2 teaspoon zaatar
- 1 garlic clove, grated
- Sea Salt and black pepper
Instructions
- Add all ingredients to a salad bowl and pour ½ the vinaigrette and toss well. Adjust any of the ingredients, vinaigrette and seasoning as needed. Serve immediately or better still chill for one hour for the flavors to mingle and develop, either ways its delicious.
Pro Tip
- To make a more substantial meal serve it along with grilled chicken, fish or other protein of your choice. This size serves up to 6 as a side, but 3-4 as a main course.
- This is a very forgiving recipe, every ingredient in this recipe is to taste you can add more/less depending on your preferences. Leave out feta if you prefer a plant based salad.
