Chipotle Glazed Salmon with Pomegranate Salsa. One word, YUM!
This quick salmon meal is for those nights when you’re craving something super flavorful, but need to keep things quick and easy too. It’s one quick glaze for the salmon and while the salmon bakes you make a quick salsa and steam up some veggies or rice. For weeknights I keep my meal low carb/grain free so this meal is doubly fast and very satisfying. Not only is this salmon easy and delicious, It comes together in just about 30 minutes.
WHY I LOVE TIS MEAL
Firstly it comes together really quickly which is perfect for weekdays. Secondly I love salmon with salsa of any kind. Its flavorful, light and does a great job brighting the richness of the salmon. Pomegranate is in season, the combination of cherry tomatoes with sweet-tart pomegranate, lime and a jalepeno kick is perfect to balance the richness of salmon. I love it with simple steamed broccoli for extra veggies, it makes nutritious and satisfying meal.
Chipotle Lime Salmon with Pomegranate Salsa, Serves 2-3
Ingredients
- 1 lb salmon fillet, center cut preferred
- 1-2 chipotle chili in adobo, (2 if they are smaller)
- 2 tablespoon adobo sauce
- juice from 1 lime
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon cumin
- 1 large garlic clove, grated or minced
- salt and pepper as needed
- 1 teaspoon lime zest
- POMEGRANATE SALSA
- 2 cups cherry tomatoes, halved
- 1 medium or large pomegranate, arils, about 1 cup
- ½-1 jalepeno, chopped, optional, I prefer the salsa to have a little heat
- 1 small red onion, chopped, I forgot to add oops
- 1 medium avocado, diced
- small handful fresh cilantro chopped
- Salt and pepper as needed
- 1-2 tablespoon lime juice
- SERVE WITH
- Rice pilaf or steamed veggies like broccoli, green beans, asparagus
Instructions
- Preheat the oven to 350 °F.
- Make the pomegranate salsa. In a mixing bowl, combine salsa ingredients. Mix and set aside for now.
- The Salmon Combine chipotle pepper and adobo sauce, lime juice, honey, cumin, and garlic in a food processor or blender and process until smooth.
- Line a baking sheet with foil or parchment paper. Place salmon on foil and pour half the glaze over the salmon ( to intensify the flavor marinate it for 15-30 minutes if you have the time)
- Bake in a 350 °F oven for 15-20 minutes depending on thickness of the fillet.
- I like to add another brushing of the glaze halfway through cooking time.
- Once done serve the salmon topped with pomegranate salsa and steamed veggies or rice.
