TO be honest with you I planned on making a pesto or a nice dressing for this salad, but the produce were so perfect, sweet and flavorful I felt ill not be doing justice by masking it with a dressing. So if you can get your hands on really delicious tomatoes, strawberries, basil leave out the dressing and enjoy this salad with simple a drizzle of balsamic, salt, pepper and perhaps shake your olive oil a couple times over the salad. It will be the most amazing summer salad. Like they say why mess with perfection.
Strawberry Caprese serves 3-4 as a side
INGREDIENTS
- 2-3 fresh really good summer heirloom tomatoes
- 8 oz fresh cherry tomatoes, washed halved
- 12 ounces strawberries, hulled and halved
- 6-8 oz fresh ciliegine mozzarella balls
- sea salt as needed
- freshly cracked black pepper
- 2 tablespoons balsamic vinegar
- 1-2 tablespoons good quality extra virgin oil
- a handful of fresh basil leaves and thyme
INSTRUCTIONS
- Slice the tomatoes and place them neatly on a platter or large plate.
- In a large bowl, combine the mozzarella, strawberries and tomatoes.
- Season with the salt and pepper and toss well.
- Top the strawberry cheese mix over the sliced tomatoes. Garnish with torn fresh basil, thyme leaves, drizzle with balsamic vinegar and olive oil.
- Serve immediately!
