Need a tasty, crunchy, chocolatey treat, look no further. These treats are loaded with omega’ 3s from chia, flax and hemp, soluble fiber from psyllium, sweetness from dates, zing from ginger and crunch from nuts and seeds, These squares are heart healthy and satisfying anytime. Take them on plane or road trips, keep them in your office fridge for a pick-me-ups at that 3 o clock slump or a healthy sweet treat anytime.

Makes about 25 pieces about- 2*2 inch squares
- 2 tbsp cold-pressed virgin coconut oil melted
- 10 fresh soft dates, pitted and chopped
- 1 cup smooth raw natural nut or seed butter I used sunflower seeds butter, almond butter works well too
- 1 tbsp fresh ginger, grated
- 2 tablespoons ground flaxseeds
- 2 tablespoons chia seeds
- 3 tablespoons psyllium powder
- 2 tablespoons hemp seeds
- 2 tablespoons raw pumpkin seeds
- 1 cup puffed amaranth or quinoa / oats ( I used amaranth)
- 10-12 raw almonds or walnuts coarsely chopped
- a pinch sea salt flakes, optional
- 100 g dark chocolate (70-80%)
- In a food processor add ginger and blitz to a purée, add pitted dates and pulse again, next add wet ingredients: nut/ seed butter, oil and blend all to a smooth paste.Turn the mixture into a mixing bowl add the dry ingredients: flax, chia, hemp seeds, psysillium, pumpkin seeds, puffed amaranth or quinoa and chopped nuts. Mix very well so all the ingredients are evenly distributed.Taste and add salt if needed (depending on how salty the nut butter is). You should have dough like consistency by now.Line an 8 x 10 inch baking dish with parchment paper and scoop the batter into it. Use the palm of your hands to press everything together tightly into an even rectangle, roughly 2/3 inch / 2 cm high.Put the dish in the fridge while you melt the chocolate on a double boiler / water bath. Pour the melted chocolate over the bars, using a spatula even out the surface. Put back into the fridge or freezer until firm and chilled. This step is optional though the chocolate makes it very tasty. The squares are just as good without.Cut into bars or squares. These squares are raw and have a very short shelf life, store the squares in the freezer and they will last for months or in the fridge if you plan on eating them within a few days.
