- 1 can organic chickpeas and 1 can black beans rinsed and drained very well & patted dry
- 1 cup baby tomatoes
- 1 cup diced cucumber
- 1 cup washed and chopped parsley+ cilantro mix
- 1/2 small red onion chopped or 3 spring onions
Dressing
- Juice of 1 lemon
- 2 cloves garlic mashed
- 2 tbsp your best extra virgin olive oil (skip if you want it fat-free)
- Salt and pepper to taste
- 1/2 tsp ground cumin
- 1/2 tsp cayenne pepper (optional)
Directions
- Mix all the ingredients for the salad dressing and let it rest while you prepare the salad ingredients.
- Mix the beans, veggies and herbs in a bowl and pour the salad dressing. Let it sit for about 30 mins-an hour so the flavors absorb. Mix well and enjoy!
