Are you an olive hater or olive lover? I happen to be not just a lover, but more of an olive addict. I simply LOVE OLIVES and this is one of my favorite ways to eat them. They are great with cocktails, wine or simply to snack on. Give it a try and let me know by leaving a comment here or on Instagram if you decide to try them.
- ¼ cup extra virgin olive oil, the best you can find
- ¼ cup freshly squeezed orange juice
- 3 thick strips of orange zest
- 3 thick strips of lemon zest
- 2 tablespoons raisins or dried currants (optional)
- 3 cups mixed pitted olives (kalamata, Castelvetrano Niçose)
- ½ teaspoon crushed red pepper
- 2 fat cloves of garlic sliced
- In a large skillet, heat the oil. Add the garlic, orange& lemon zest and crushed red pepper and cook over gentle heat, stirring, until the garlic is softened, about 2 minutes.
- Add the olives and cook, stirring, until heated through, about 5 minutes.
- Remove from the heat and stir in the orange juice. Let cool completely, stirring occasionally. Serve at room temperature with toothpicks with drinks.
