A quick healthy twist on an autumnal classic, pumpkin pie breakfast smoothie. This breakfast smoothie is quick to put together, has all the flavors of a pumpkin pie and very nutritious.
PUMPKIN PIE BREAKFAST SMOOTHIE
INGREDIENTS
MAKES ABOUT 2 SMOOTHIES
- ½ cup pumpkin puree
- 1-2 medjool dates, Pitted
- ¼ cup rolled oats, soaked overnight in 1/2 cup plant milk or 1 small banana
- 4-6 raw walnuts or almonds
- 1 teaspoon fresh or ground ginger
- 1 ½ cup almond or oat milk
- ½ tsp ground cinnamon
- ½ tsp pumpkin spice mix, store bought or homemade (mix ¼ tsp each nutmeg, cloves, ground)
Blend all the ingredients in a blender until smooth. Drink right away.
