This is the first year my fig tree has an amazing number of fruits on it. The image below is the first one and I was super excited to see it ripe under the hot summer sun. Figs are one of our favorite summer fruits and we wait for this time of the year to eat these beauties.
Figs do last here right up to October, so we get to enjoy them a bit longer. They are best eaten as is and are so versatile in sweet or savory recipes. Pizza is my new favorite recipe. This pizza has a base of caramelized onions with salty cambazola and the peppery arugula balances there sweet jammy figs beautifully. If blue cheese is not you’re thing stick with mozzeralla.


Fig Pizza
Makes 2 feeds 4
Ingredients
- 1 large red onion- thinly sliced
- 2-3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 cup crumbled gorganzola or cambazola
- 8-10 medium fresh ripe figs sliced
- handful arugula
- chilli flakes optional
- 2 balls of pizza dough, about 8 oz each
Instructions
- Preheat oven to the highest setting your oven can go. At least 400F. Heat pizza stone or baking sheet if using method 2.
- If your using a store bought pizza dough, leave it out on the counter on a floured surface 30 minutes.
- In a frying pan, saute onion in oil, over high heat, sauteeing frequently. Lower heat to a medium. Add the minced garlic. Continue sautéing for another 10 -12 minutes until onions begin to caramelize and soft. Add balsamic vinegar and cook for another 4-5 minutes until the balsamic vinegar reduces. Set aside.
- Divide dough and roll or stretch into 2 pizzas ovals or rounds.
THERE ARE TWO WAYS TO MAKE THE PIZZA
Method 1. Place the rolled dough directly onto the hot grill pan and grill for 2-3 minutes until you get grill marks. Flip and grill the other side. Sprinkle half the cheese, followed by half the caramelized onions and figs. Place the pizza back in the hot oven to melt the cheese and heat through. About 2-3 minutes.
Second method. Heat a pizza stone or baking pan while you preheat the oven. Top the rolled out dough with cheese, caramelized onions and figs, then place it in the oven. Bake until the pizzas are cooked through, about 10-15 minutes. Checking frequently. The cheese should be melted, the pizza should be crisp and cooked.
Pull the pizza out of the oven, place on a cutting board, top the pizza with arugula, serve immediately.
