Vegan Blueberry Muffin Overnight Oatmeal; rich in fiber, protein, anti-inflammatory antioxidants to keep you full and fueled.

Ingredients
  

  • 1 cup organic rolled oats gluten free preferably
  • 2 cups unsweetened Almond milk or other plant milk
  • ½-¾ cup frozen blueberries
  • 2 tbsps ground organic flaxseeds
  • ½ tsp vanilla extract
  • 1 tbsp pure organic maple syrup
  • tsp almond extract, optional

Garnish

  • 1 tbsp almond butter or other nut or seed butter
  • cup plain vegan or regular yogurt
  • ¼ cup fresh blueberries
  • 2 tbsp chopped almonds, optional
  • 1 medium banana sliced

Instructions
 

  • In a medium bowl, combine the oats, milk, frozen blueberries(no need to thaw), maple syrup, ground flaxseeds, vanilla extract and almond extract if using. Stir to mix well.
  • Cover or seal the container(if using mason jar), and allow it to soak in the fridge overnight.
  • The next morning garnish with desired toppings recommended and enjoy!
