Tomato Halloumi Salad with Pomegranate Sumac Vinaigrette

A Cypriotic/ Mediterranean tomato salad with seared halloumi topped with pomegranate, sumac, walnut dressing along with fresh herbs, cucumber. This salad is fresh, incredibly tasty and at the best way to enjoy summer tomatoes.
8ozhalloumi cheese**, bring it to room temperatureand sliced into slightly thick pieces for searing
1½-2lbstomatoeschoose a mix of summer varieties
3Persian cucumbersliced
1medium red onion, chopped roughly
3-4green scallionssliced
½cupcilantro, chopped
½cupfresh parsley, chopped
8-10 mint leaves, torn
½ cup pitted green olives
1 tablespoonolive oil
Pomegranate Walnut Vinaigrette
3-4tbspe.v olive oil
1tspsumac
3-4tbsppomegranate molasses or balsamic vinegar** see notes
1tbsplemon juice
½cup raw walnuts, finely choppedsave a few extra for garnish
½tspdried mint leaves optional
sea salt as needed
black pepper as needed
Instructions
Place the sliced tomato, cucumber on a platter. Top the tomatoes with , chopped herbs, spring onions, sliced olives and pomegranate arils.
Pat the halloumi slices with a paper towel to ensure proper searing and prevent splattering. Brush with olive oil and ear for 2-3 minutes on each side on a hot frying pan. Once done place and tuck them in the tomato slices.
For the vinaigrette, mix all ingredients for the dressing. Spoon the dressing all over the salad before serving.
Garnish with pomegranate if using, a few grinds of black pepper and extra chopped walnuts. Enjoy as a side to accompany grilled meats or on its own.
Notes
Use 2 tablespoon s of balsamic glaze instead of pomegranate molasses. Balsamic is slightly more sweeter than pomegranate molasses. Pomegranate molasses is made by cooking down fresh pomegranate juice. Its thick, rich, tart and sweet.. Its a good balance of sweet, tart and sour and perfect to use in salad dressing or glaze meats and hearty vegetables.. Feta sliced into similar sized pieces can be used if halloumi is hard to find. Feta is an excellent substitute.
