½cuprolled oats use gluten free, organic if possible
2tbspchia seedsorganic preferably
¾cupalmond or other plant milk of your choicehomemade or good quality store bought
2tbspplain unsweetened plant yogurtI use full fat cashew yogurt, coconut is good too
½mediumfresh peach, diced or use frozen
1-2tbspwalnuts or any nuts of your choiceoptional
1tspmaple syrup or sweetener of your choiceoptional, I didn't use any as the peaches were quiet sweet
¼tspvanilla extract
Instructions
In a bowl or mason jar, combine plant milk, vanilla and and chia seeds. Stir to combine. Set aside for 10 minutes to absorb the liquid a little.
Add oats and diced peaches. Stir well, slightly mashing the peaches with spoon to make it creamy. Now add plant yogurt on top and swirl into the oats. Leave some big clumps to create a creamy texture — they’re delicious the next day when its chilled! Secure with a lid if using a jar and place in the fridge for at least 8 hours or overnight.
The next day, add your preferred toppings. I like chopped walnuts, also a couple tbsp of granola is delicious. Enjoy!
Notes
OPTIONAL
For quick warm cooked oats, heat the overnight oats in the microwave for 45-60 seconds. If placed in a jar make sure there's enough room at the top of your jar to allow for expansion and prevent overflow, and that it’s a microwave-safe container.
Alternatively, transfer the overnight oats to a saucepan and heat over medium heat until warmed through. You may need to add more liquid if oats seem too thick/dry, chia seeds are very thirsty and absorb a lot of liquid.
Overnight oats will keep in the refrigerator for 2- at most3 days, though best within the first 12-24 hours. It never lasts that long in my fridge haha!
Overnight oats are not freezer friendly.
