6largethick sliced bread, anything you normally use
flaky salt and black pepper as needed
Instructions
In a small mixing bowl, mix the honey, thyme leaves, 2 tbsp lemon juice, 2 tbsp orange juice.
Peel and slice the oranges. Toast the bread.
In a small food processor whisk the ricotta and vanilla extract until fluffy, creamy and smooth.
Spread with ricotta, place the orange slices and drizzle with the lemon-honey mixture and garnish with a few leaves of arugula. Season with salt and pepper. enjoy!!
Notes
You can use orange juice and zest if you're out of lemons. Simply zest about 2 tablespoons from one of the oranges, peel and slice as usual and squeeze about 2 tbsp from one or 2 slices.
