This cilantro lime dressing is the perfect summer salad dressing – very similar to my mint cilantro green chutney this version is more universal. It’s herbaceous, zesty and perfect drizzled over grilled salmon, chicken, shrimp, summer salads, grilled veggies, tacos, bowls, elevate plain rice or grain, and so much more.
This dressing start off as a chimmichuri like herb mix serve it as-is with some e.v olive oil as a dip. The second option is, add Greek yogurt/mayo to make a creamy ranch-like dressing, or add chopped avocado to make a goddess like dressing thats a thick, creamy sauce perfect over tacos or burrito bowls.
Start by adding the cilantro, garlic and other ingredients to the food processor so that the herb gets finely chopped and the dressing becomes emulsified in the olive oil. It takes a few seconds to blend. Here are the basic ingredients.
- Cilantro is the star of the show. It makes the dressing super fresh and green.
- Garlic a little garlic adds a little bite, about 1 clove.
- Lime juice makes it tangy.
- Maple syrup or honey to balances the sharp flavors.
- Mint or other herbs like parsley, basil for extra freshness and zing
- And extra-virgin olive oil adds richness and ties it all together.
- Optional Greek yogurt or avocado are added for creamy dressing.
Pulse it together-try not to blend it too long, the cilantro starts to oxidize and turns dark also it still has pretty flecks of green.
Cilantro Lime Sauce or Dressing
Ingredients
- 1 cup packed cilantro leaves, washed and patted dry
- 1 clove garlic grated
- 2-3 tbsp lime or lemon juice
- ½-1 tsp maple or honey to balance
- 1 jalapeno for heat, deseed for milder flavor
- 2 tbsp e.v.olive oil
- sea salt as needed
- ½ cup Greek yogurt optional for creamy dressing
- 2 tbsp mayo optional for creamy dressing
- 1 medium avocado, diced optional for creamy goddess dressing
Instructions
- Blend the first 7 ingredients until the cilantro is finely minced.
- For a creamy sauce or dressing: transfer the herb mix into a bowl and add yogurt and mayo and mix vey well. Taste and adjust the seasoning as needed.For creamy goddess blend one avocado until smooth nd creamy. Use in burrito bowl, tacos or as needed.
